Here's what you need for 2 pizza:
250 grams flour zero zero,
125 grams water,
15 grams extra virgin olive oil,
a pinch of salt,
150 grams tomato puree and
100 grams mozzarella. And any topping you like!
Your fantasy is the limit!
First, heat up the oven at 240 Celsius with top grill at medium power.
Sift the flour and shape as a volcano on a clean surface.
Add the water, salt and extra virgin olive oil and mix energetically until reaching a homogeneous dough. Sure you can use your mixer.
Once ready, with the help of a rolling pin, lay it down as thinner as you can, without breaking it!
You can use either oven baking paper or a baking tray.
Add the tomato sauce as much as you like, mozzarella, basil and everything else you like.
Bake in oven for 4 to 5 minutes until reaching the desired crunchiness and cooking.
Your thin crust pizza is ready!

HAND MADE PESTO IN 5 MINUTES OR LESS

Ciao! My name is Luigia but all my nephews and nieces call me Nonna Gigia. Today i'll show you how to prepare a delicious and healthy home made pesto sauce in less than 5 minutes!
Are you ready? Let's go! Here the list of ingredients you need for 2 portions.

50 grams fresh basil leaves,
100 grams of extra virgin olive oil,
70 grams of freshly grated Parmigiano DOP cheese,
30 grams of freshly grated Pecorino Romano DOP,
10 grams pine nuts,
2 cloves of garlic.
Start grounding basil leaves and garlic in the mortar. add the pine nuts and both Pecorino and Parmigiano, keeping grounding the mix.
Time to add the oil! Mix the compost delicately until perfect amalgamation.
Your hand-made pesto is ready! Enrich your Spaghetti or your morning breakfast with the healthiest and tastier of all the Italian sauce!

BOLOGNESE SAUCE IN 30 MINUTES!

Ciao! My name is Allegra and today I'll show you how to cook a perfect Bolognese sauce in less than 30 minutes with my GrandMa's secret! Follow me!

Here ingredients for 2 portions of Bolognese sauce, perfect to enrich you spaghetti, ravioli, lasagna or even a simple and delicious bruschetta!

100 grams thinly ground beef sirloin,
300 grams of Tomato puree,
4 table spoon of Extra virgin olive oil,
1 fresh carrot,
half red onion,
1 stem of fresh celery,
4 leaves of fresh basil,
a pinch of salt.

Are you ready with all the ingredients? Fire up!
Thinly chop the carrot, half onion and the stem of celery.
The thinner the better!

Gently heat up the extra virgin olive oil in a small pot and pour all the chopped vegetables in the oil while it's heating up.

Keep the temperature low. Does not have to fry, but gently stir-fry, or as we call it in Italy, soffritto. Temperature is fundamental to release all the flavors and essential oils of vegetables, without burning them!

When vegetables started getting golden, add the ground beef and slowly stir for 3 minutes.

Time to add our tomato puree! Pour the tomato puree and basil leaves.
Stir energetically to amalgamate all the ingredients.

Let it slowly cook for 15 minutes at least. The longer the better!

My Grandma's secret? Add a pinch of sugar to lower the acidity and make your bolognese sauce taste even better!

Your delicious Bolognese sauce is ready!

SPAGHETTI CARBONARA WITH CHEF ALESSANDRO

I want to share with you my favorite recipes and a few Italian tricks to make them taste even more delicious! ! !

Today I'm gonna show you how to make a perfect Carbonara. Are you ready? ? Fire Up!

Here the list of ingredients you need for 2 persons:
200 grams spaghetti or rigatoni,
100 grams Pecorino Romano DOP cheese,
100 grams Guanciale Amatrice PAT,
6 egg yolks,
a tea spoon of freshly ground black pepper,
a table spoon of salt.

Heat up water to boiling point in a large pot.

When water is boiling, add a table spoon of salt and all the spaghetti.
Do not break them or you can make an Italian upset! ! !

While pasta is cooking, prepare in a bowl a mix of egg yolks and thinly grated Pecorino Romano cheese.
Stir energetically in order to make a perfect creamy mix.

Heat up a pan, but not too hot, and cook the chopped Guanciale until it gets golden and crunchy.
When pasta is almost cooked, pour it with a bit of cooking water in the pan with Guanciale.

Turn off the fire and pour the mix of Pecorino and egg yolks. Stir gently to make a perfect cream. Don't make scrambled eggs! ! ! !

Add ground black pepper as much as you like and serve your Carbonara to whom you love!
