Burrata is a fresh Italian cheese from Puglia: a pouch of stretched mozzarella filled with stracciatella — soft shreds of mozzarella soaked in cream. Cut it open and the creamy centre spills out. Buffalo mozzarella (水牛芝士) is its famous cousin, made from water buffalo milk in Campania, with a tangier, more elastic bite. Both are best eaten within days of making, which is why freshness and a proper cold chain matter more than anything.
Store burrata in the fridge at 0–4°C, in its original liquid. Never freeze it — freezing destroys the creamy texture inside.
Burrata is at its best within 48 hours of opening, and ideally within a few days of production. Always check the use-by date and plan to eat it soon after delivery.
Take it out of the fridge 30–60 minutes before serving. Cold mutes the flavour; at room temperature the centre turns luxuriously soft.
